Etsy Shop!

Catch Up: Mother's Day

I need to do a little catch up on my blogging, starting with Mother's Day! We had just gotten in the night before from Las Vegas so really all I wanted to do on Mother's Day was relax!! That morning I got breakfast in bed- pancakes topped with strawberries and cool whip with bacon and orange juice...yum! I also got flowers that Dawson picked out, some candy (mini charleston chews and sour patch kids, my favs!), a homemade card, and a cook book I have been wanting (more Tasty Tuesday recipes!) I loved it all! After that Christopher and Dawson headed to church and I stayed behind because I got a pretty wicked heat rash from all the heat down in Vegas. I pretty much had it all over, with it being the worst on my arms and back. Thank goodness it was gone after about 3-4 days. When they returned home from church we just relaxed, went and visited Christopher's Mom to drop off her gift, then came home and ate dinner and relaxed more. I couldn't of asked for a more perfect Mother's Day, with the best part being that I got to hang out and have fun all day with my boys!

Tasty Tuesday (one day late!)

I went to a Pampered Chef party and they made this for the food....I LOVE it! So simple to make and so so so yummy!

Mexican Chicken Lasagna

INGREDIENTS
- 1/4 c. lightly packed Cilantro leaves
- 1 pkg. 8 oz. cream cheese
- 2 c. (8 oz.) shredded Monterey Jack cheese, divided
- 1 medium onion (about 2/3 c. chopped)
- 1 can (28 oz.) enchilada sauce
- 12 (6 inch) corn tortillas
- 3 c. diced/shredded cooked chicken

DIRECTIONS
- Microwave cream cheese in microwave 30-45 seconds, or until very soft.
- Add cilantro and 1 1/2 c. cheese; mix.
- Spread 2/3 c. enchilada sauce in bottom of pan. Set aside the rest.
- Dip four tortillas in the enchilada sauce and arrange over sauce in bottom of pan.
- Scoop half of cream cheese mixture over tortillas and spread.
- Put 1 c. of chicken and 1/3 of onion on top.
- Repeat layers one time.
- Pour remaining enchilada sauce over lasagna and sprinkle with remaining 1/2 c. cheese.
- Microwave, covered, on high 12-15 minutes or until center is hot.

Yield: 8 servings

If you don't have a covered microwave safe pan, you will have to adjust this to the oven. I would say 350 degrees for about 20 minutes, or until bubbly and warmed through!

Overheard:


This morning Dawson was taking FOREVER to eat his breakfast. He was either playing, talking, or too consumed in other things and would not chew and swallow the wad of food in his mouth. Of course this was starting to annoy Christopher and I greatly and this is what happened next:

Chris: Dawson, you need to chew and swallow your food...now.
Sarah: Just eat Dawson, this is a pain in the butt!
Dawson: (While poking his butt with a sly grin on his face) Oww Butt! Oww Butt!

Yep. He knew exactly what I meant and even sassed me about it. Got to love 2 year olds!! The picture isn't from the event, but I thought it captured some sass.

The Vegas

Last Tuesday we left for a little mini vacation down to Las Vegas. I found a great deal on a room at Excalibur and they had a few other specials going on too. We wanted to have a little relaxing getaway involving sun, laziness, and doing whatever we wanted (which meant nothing!) We figured this was a perfect opportunity before the little babe came and we all had a blast! Dawson is such a little vacationer and absolutely loved the pool. When he first saw our castle hotel he got all excited and said "Mom, a Temple!" After some explaining, when you asked him what the hotel was he then called it Vegas. Driving home, we saw a real Temple and he called it Vegas. After more explaining and a bit of confusion, I think he have it cleared up! Here are some pictures to tell you more about the trip!

Tasty Tuesday

Ok, so I am a day early but I have time right now to sit down and blog and I don't want to forget so I figured better now than late (or even not at all!) To continue with my favorite Mexican food recipes like I said last week, here is the recipe for Black Bean and Corn Salad. This recipe is actually a few recipes I sort of combined to come up with my favorite combination of flavors. I love this side dish with enchiladas, tacos, whatever! It is a cold salad so it is perfect for the summer; it's light, refreshing, and pretty healthy too! Pair it with last weeks enchilada recipe and you have a themed dinner for Cinco de Mayo tomorrow (and one of my favorite meals!) Enjoy!

Black Bean and Corn Salad

1 can black beans (drained and rinsed well)
1 can corn (drained)
6 ounces Monterey Jack cheese, cubed
1/4 cup sliced green onions
1/2 cup cilantro, roughly chopped
Combine all these ingredients in large bowl.

In a small bowl combine:
1/3 cup fresh lime juice
1/2 cup olive oil
1 clove garlic, minced
1 t salt
1/8-1/4 t cayenne pepper (depending on how much heat you want!)
Whisk dressing together, then pour over bean mixture. Stir to coat. Refrigerate for at least 1 hour to get flavors to combine.

*You can eat it straight up with a fork or with tortilla chips, yum! I have seen recipes with diced tomatoes or avocados in it, so you can alter the recipe to your liking! Next weeks recipe: Mexican Chicken Lasagna!

An Update on the Babe


Yesterday I had my regular OB checkup, and everything is looking great with our little girl! As of today I am 30 weeks, which means only 10 more weeks to go! I go back in 3 weeks, then I start my every 2 week appointments, then weekly. She is going to be here before I know it. I cannot believe how fast it has gone (I think it's because I have Dawson to chase around daily) and I am so glad we have her room done and our spring cleaning finished so we can relax and enjoy the tail end of it.
It's amazing to me how different 2 pregnancies can be! With Dawson, everything was smooth sailing pretty much. Towards the end of my pregnancy with him though my ankles swelled a lot and I also failed my one hour glucose test so I had to go in and take the 3 hour one, which thankfully I passed. I was also nauseous with him pretty much the whole time. With this one, the first half of my pregnancy was stressful due to some spotting that I had and because of that she had some blood in her intestine from swallowing it. They watched it and thankfully it went away so it wasn't a sign of something more serious. I only had a pinch of nausea with her and I have been a lot more active this time around (again because of Dawson) and I have had no swelling so far. Pretty much completely different!
We cannot wait to meet our little pink bundle of joy soon! Like all parents, we just want to have a healthy, strong baby and only the best for her. We are so excited to see Dawson be a big brother and know that he will be so cute with her. It will be so fun to see them interact. Let the countdown begin!
